牛黄是脊索动物门哺乳纲牛科动物牛胆囊的胆结石。
在胆囊中产生的称“胆黄”或“蛋黄”，在胆管中产生的称“管黄”，在肝管中产生的称“肝黄”。
牛黄完整者多呈卵形，质轻，表面金黄至黄褐色，细腻而有光泽。中医学认为牛黄气清香，味微苦而后甜，性凉。可用于解热、解毒、定惊。内服治高热神志昏迷、癫狂、小儿惊风、抽搐等症，外用治咽喉肿痛、口疮痈肿、尿毒症。天然牛黄很珍贵，国际上的价格要高于黄金，大部分使用的是人工牛黄。
